ONES character: How did you become attached to coffee at the time?

Sam: Learning to make coffee was a very accidental opportunity. At that time, Starbucks was recruiting coffee apprentices, and my friend passed the application and recommended me to go. In fact, the learning process is very boring. We have to memorize hundreds of beverage formulas in one month, as well as the abbreviations of beverages and the shelf life of materials. The reason why I keep sticking to it is the atmosphere of the cafe: everyone has a cup of coffee, and everyone can speak freely in the same space. Regardless of class status, education, or work, everyone puts down their psychological defenses and communicates in the most relaxed and sincere state.

In fact, looking back on my life experience, I am very grateful that coffee has appeared in my life. I have worked in Kunming for a few years before. I have tried all kinds of jobs such as seafood ingredients buyer, hardware store chores, construction site moving bricks, etc. I don't know what suits me. So it is no exaggeration to say that coffee is like a beam of light into my life, and the whole person is slowly ignited.

I have been in the coffee industry for 4 years, and in the middle of the journey, I did other jobs for other reasons. It was also during that time that I figured out some truths - the sense of security, comfort and healing that the profession of barista brings to me is something that no position can give me, so coffee is something I will do for the rest of my life. In the future, I plan to play the competition hammer to practice my skills. At the same time, I will gradually learn about roasting coffee beans and become a roaster.

ONES People: What is your day-to-day job at ONES?

Sam: Daily coffee debugging and parameter formulation, ordering, coffee making, bar space configuration, bar cleaning, beverage development and data statistics. At the busiest time, I received 126 orders a day, and there will be more orders during the release of new products.

There are many colleagues who visit the coffee bar every day, and I can understand it by saying "old rules" directly at the front desk. I will write down their regular drinks, including the names of my colleagues, so that I can make coffee quickly and easily. In addition to my daily work, I will also conduct new product development from time to time, and plan some new product activities to give you more preferential benefits.

In the past few months, in the communication with my colleagues, I found that the ONES friends still have a deep exploration of coffee. The coffee machine brand used by ONES Café is La Marzocco, a high-end coffee machine brand that combines beauty, quality and cost-effectiveness. , There are more pursuits in patterns. Sometimes, we also discuss how often to change beans, how to make pour-over coffee, how to pull flowers, etc.

ONES characters: What kind of company do you perceive ONES to be?

Sam: This is the first time I have seen a company that opens a coffee bar at the front of the company. I find it very novel and meaningful.

My first impression of ONES is professionalism. Everyone is in a hurry, and it is also in a hurry to get some coffee. At the same time, I also found that during the day, there will always be one or two people who order seven or eight cups as soon as they come, saying that they are inviting friends from the department to drink, and the team atmosphere is very strong.
In my understanding, the significance of ONES Café is, on the one hand, that it can provide a higher quality and diversified beverage experience, and create a good coffee atmosphere for everyone with my own ability. On the other hand, a coffee bar allows everyone to relax, take a break from the busy work, and just enjoy the cup of coffee at the moment. ONES Café is an area where colleagues can work flexibly, and it is also a space that promotes people-to-people exchanges and inspirational collisions.

ONES character: Do you have any tips for friends who want to make coffee at home?

Sam: Yes, I would like to share a few tips with you:

  • What is the difference between fully automatic and semi-automatic coffee machines? In general, the automatic coffee machine is more convenient and fast, and the semi-automatic coffee machine is more playable. Fully automatic coffee machines can be done from start to finish with just the push of a button; semi-automatic coffee machines require manual assistance or separate equipment.
  • When operating the semi-automatic coffee machine, after the coffee handle is powdered, gently buckle the handle on the coffee machine to avoid excessive force, otherwise it will affect the taste.
  • Home coffee machines will come with a coffee bean grinding knob, which can adjust the thickness of the coffee powder and choose the taste you like. When you feel too bitter, you can turn the button to adjust to the coarse grinding mode; when you feel too sour, you can adjust to the fine grinding mode.
  • To make iced coffee at home, it is recommended to buy ice hockey-shaped ice trays, which melt slowly and are more beautiful.
